What you will do

Touring the visitor center and the pepper sauce factory is just one part of the Avery Island experience. In addition to seeing how we age TABASCO® Sauce in white oak barrels and ship it all over the world, you can visit Avery Island’s 170-acre Jungle Gardens and see, in season, a variety of azaleas, camellias and bamboo.
You might even spy some alligators, deer and raccoons that live in the hills and marshes around the gardens. And then there are thousands of snowy egrets that nest on the island each spring on specially built, pier-like structures in a pond nicknamed “Bird City.” You can stroll the gardens along a path covered by gnarled oaks laced with Spanish moss and stand at the shrine that houses a centuries-old Buddha — a gift to E. A. McIlhenny in 1936.
When you’re ready to see how TABASCO® Sauce is made, you can take the factory tour. There’s a short film on TABASCO® history and a guided tour of our bottling and packaging operations. Your next stop might be Restaurant 1868, where you can sample local cuisine seasoned perfectly with our classic TABASCO® Original Red and other Pepper Sauce flavors. After your meal, it’s always nice to stroll around the TABASCO® Country Store and check out a wide array of TABASCO® products and souvenirs for sale.

TABASCO® brand products are made by McIlhenny Company, founded in 1868 on Avery Island, Louisiana. To this day, the company is still family-owned and operated on that very same site.

Sowing the Seeds
According to family tradition, TABASCO® brand Original Red Sauce was created in the mid to late 1860s by Edmund McIlhenny. A food lover and avid gardener, McIlhenny was given seeds of Capsicum frutescens peppers that had come from Mexico or Central America. On Avery Island in South Louisiana, he sowed the seeds, nurtured the plants and delighted in the spicy flavor of the peppers they bore.

TABASCO® Sauce is still made on Avery Island, Louisiana, to this day. In fact, about half of the company’s 200 employees actually live on Avery Island, with many of their parents and grandparents having worked and lived there as well. Anthony “Tony” Simmons, the current Chairman of the Board and CEO, is the seventh McIlhenny in a chain of direct descendants who have strived to preserve the legacy and traditions of the company’s creator.
